Diploma In Food Production

We, Cook and Bake Academy provide Diploma in Food Production also known as Diploma in Culinary Arts. We also offer Diploma in Bakery and Patisserie and Advanced Diploma in Culinary Arts which is affiliated with City and Guilds, London, UK that is recognised in almost 100 countries worldwide. In this curriculum we train all our students from basics leading to the core. The classes are conducted thrice a week for practical and twice a week on theory. The duration of the practical session is for about 3 hours and theory session is for one and a half hour approx. Moreover more emphasis is given on practical sessions and that too hands on. Theory sessions are also conducted so that the technical knowledge of the students can be increased. The eligibility criterion of this course is that the aspirant should be minimum 16 years of age and should be Class 10thpassed out. The Diploma course duration is for an year consisting of 6 months practical followed by 4 months of industrial training (internship) in a five star hotel which is assured from our end. The course is assessed on continuous assessment, written as well as practical examinations.The topics covered during the course are safety at work in food production, food production methods, cost control operations, storage and care of materials, kitchen maintenance and design, menu planning, budgeting, costing and control, cooking methods like boiling, poaching, steaming, stewing, braising, deep frying, baking, roasting and grilling. We also cover cold food preparations and basic patisserie techniques and nutrition at work.
